Two tins. Ceremonial for a classic bowl. Vanilla when you want the same tea, a little softer.

The classic bowl

This is ceremonial matcha as tea: bright, a little sweet, with a light foam on top.

  • About a teaspoon of ceremonial matcha, sifted
  • A small cup of hot water — not boiling (around 80°C)
  • A bowl and a bamboo whisk

Warm the bowl, pour that water away, add the powder, a splash of water to make a paste, then the rest. Whisk quickly in a W until the top is foamy. Drink it now — matcha is best in the cup, not in a bottle.

Ceremonial

Iced matcha latte

Milk should carry the tea, not bury it. Whisk a ceremonial concentrate, then pour over ice and milk.

  • A heaped teaspoon of ceremonial matcha, sifted
  • A splash of hot (not boiling) water to make a strong tea
  • 180ml cold oat or dairy milk, ice

Whisk the concentrate until smooth. Pour over ice and milk. No syrup needed if the leaf is good; a drop of honey if you must.

Vanilla

Evening vanilla bowl

Softer than straight ceremonial. Treat it as tea, not a dessert mix: still hot water, still a whisk.

  • About a teaspoon of vanilla matcha
  • A small cup of hot water — not boiling
  • Optional: 30ml warm milk at the end

Whisk the same way as the morning bowl. You should still taste matcha first, vanilla second.
